1) Lime and chili roasted cashews


Ingredients:

  • Cashews- 2 cupsLime- 1 lime juicedSea salt- 1 tspRed chili powder- ¼ tspBlack pepper- ¼ tspEgg white- 1

Directions:

  • Preheat oven to 350 deg F.In a bowl, whisk together lime zest, salt, black pepper, red chili powder, egg white. Now pour this mixture over the cashews and toss well to combineNow transfer the nuts to a baking sheet lined with parchment paper and spread them evenlyRoast them for about 30 minutes stirring occassionalyNow remove the nuts from the oven and drizzle it with lime juice while they are hotLet it cool and serve

2) Maple and chili popcorn


Ingredients:

  • Table salt-1 ½ tspChili powder- 1 tspPaprika- ½ tspPop corn kernels- ½ cupPeanut oil- 3 tbspSalted butter- 4 tbspMaple syrup- 2 tbsp

Directions:

  • In a bowl, combine together chili powder and parikaNow in a large pot, add oil and heat it over low to medium heat.Add popcorn kernels and cover it with a lid and shake continuously while the kernels popOnce popping slows down take it off the heat and shakeNow combine maple syrup and butter and microwave it until they melt (for about a minute)Toss the popcorn with maple butter and chili powder, salt mixtureServe it warm

3) Mozarella cheese sticks


Ingredients:

  • Mozzarella- 500 gAll purpose flour- ¾ cupEggs- 3Whole milk- 3 tbspBreadcrumbs- 2 cupsGarlic powder- 1 ½ tspOnion powder- 1 ½ tspDried basil- 1 tspDried oregano- 1 tspDried parsley- 1tspDried thyme- 1 tspRefined oil- for fryingSalt

Directions:

  • Cut mozzarella length wise into sticksIn a shallow dish, place some flourIn another dish whisk together eggs and milkIn a third dish, mix bread crumbs, garlic powder, onion powder, oregano, parsley and thymeNow put one mozzarella stick first in the flour, then in the egg mixture and then coat it with bread crumbs mixRepeat the same with all mozzarella sticksKeep the mozzarella sticks in the freezer for an hourNow in a wok, add oil for frying and deep fry the mozzarella sticks until golden brown and crisp from all sidesSeason with salt and serve hot with a sauce of your choice

4) Carrot soup


Ingredients:

  • Carrots- 500 gm peeled and slicedWhite onions- 2 choppedCoconut oil- 2 tbspGaram masala- 2 tspSalt- ¾ tspBlack pepper- pinchCoconut milk- 1 canLime juice- 1 tbsp

Directions:

  • Preheat oven to 425 Deg FNow take a baking sheet and cover it with an aluminium foil.Now place carrots and onions on the sheet and drizzle oil, garam masala, black pepper and saltToss the vegetable to evenly coat themSpread this as a thin layer on the sheetNow roast this for 30 minutes until the vegetable are lightly caramelized and tenderNow in a blender, place coconut milk and 1 ¼ cups of boiling water and add the roasted veggies, lime juice and process until smooth and creamySeason with salt and pepper
