Green beans are the most under-rated vegetables but they are packed with several nutritional benefits. They contain a good amount of vitamin C, potassium and fiber. 1) Tangy Green beans


· Green beans- 10-12 sticks

· Lemon zest- 1 tsp

· Salt- ½ tsp

· Black pepper- 1 tsp

· Olive oil- 2 tbsp

· Lemon- half


· In a wok, add some oil and saute green beans for a few minutes till they are just cooked

· Now in a large skillet, saute beans, lemon zest, salt and pepper in hot olive oil over medium- high heat until beans are hot, cooked, tender and crisp

· Now squeeze lemon over the beans

· Serve immediately

2) Caramelized Green Beans


· Green beans- 500 gms

· Brown sugar- 2 tbsp

· Soy sauce- 1 tbsp

· Red pepper grounder- ½ tsp

· Red bell pepper sliced- 1

· Onion sliced- 1

· Oil- 1 tsp

· Salt- ¾ tsp


· In a pan of boiling water, add beans and cook them over fro 1 minute, drain and set aside

· Now put the green beans into ice water to stop the cooking process and drain well

· In a small bowl, stir together brown sugar, soy sauce and red pepper powder

· In a wok, saute bell pepper, onions, green beans in some oil over medium to high flame for about 3-5 minutes

· Sprinkle some salt and remove from heat

· Now add the soy sauce mixture and stir to coat

· Serve immediately

3) Green Beans in Tomato Sauce


· Beans- 500 gm

· Butter- 1 tbsp

· Onions- chopped- 1

· Pasta sauce- 1 jar

· Fresh thyme- 2 tsp

· Salt and pepper – to taste


· Steam beans in some water until they are just cooked. Rinse and set aside

· Now in a skillet, add butter and heat it over medium flame and add onions, cook for 30 seconds

· Stir in beans and pasta sauce and thyme leaves

· Cook and keep stirring for 2-3 minutes

· Add salt and pepper as per your taste

· Serve

4) Butter Garlic Green Beans


· Green beans trimmed and halved- 500 gm

· Butter- 3 tbsp

· Garlic cloves minced- 3

· Lemon- half

· Black pepper- to taste

· Salt- to taste


· In a large skillet, place green beans and cover them with water and bring it to boil and cook till the beans are soft, drain and set aside

· Now in a wok, add butter, green beans and cook for 2-3 minutes

· Add minced garlic and season with lemon, pepper and salt

· Serve immediately

5) Cheesy Baked Green Beans


· Green beans- 500 gm

· Heavy cream- ½ cup

· Garlic cloves sliced- 2

· Lemon zest- 2 tsp

· Mozzarella- 1 cup

· Parmesan cheese- 2/3 cup

· Salt- as per taste

· Red pepper flakes- pinch


· Preheat oven to 400 degree.

· In a baking dish, place green beans and pour some cream, garlic and lemon zest over it

· Season them with salt and red pepper flakes

· Finally sprinkle some mozzarella and parmesan and bake until they are tender and cheese has melted (25-30 minutes)
