Ingredients:Chickpeas – 1 cup, soaked overnight and boiledSpinach – 1 whole bunch (only leaves) blanched in salted boiling waterBengal grams (optional) – 1 cup, soaked and boiledGreen peas (optional) – 1 cup, boiledGreen chilies – 2 large (or as per taste)Ginger – 1 inch choppedGarlic – 6-8 cloves choppedCumin seeds – 1 teaspoon, roasted and finely powderedChat masala – 2 tspGaram masala – 1 tspSalt to tasteCheese cubes – diced in small cubesBread crumbs – 1 cupWhite oil for cooking – 1 tablespoon Process:In a blender blend the chickpeas, Bengal gram and peas (if using), ginger, garlic and green chilies.Squeeze out excess water from the spinach and add to the blender and blend a bit more.Take out the mixture in a bowl and mix in the spices, salt to taste and combine well. Add in the bread crumbs, small amount at a time and make a nice, workable dough.Take a handful of this dough and roll into a ball and make a depression in it. Now, take a small cheese cube and place it inside the ball shape.Work it into a flat, around 1 inch thick kebab or tikka shape. Make all the kebabs repeating this process.Heat a non-stick pan and heat the oil. Place all the kebabs on the pan and cook on low heat until one side has become fully golden brown. Now, flip and cook the other side equally golden brown, cooking on low flame. Serve hot with chutney, dip or ketchup. The cheesy filling of these kebabs will melt your heart.
