1) Black Bean Hummus


Ingredients:

  • Black beans (boiled)- 3 cupsGarlic clove- 1Olive oil- 2-3 tbspTahini- 2 tbspLime juice- ½ tspCumin- ½ tspChili powder- ½ tspFresh coriander (chopped)- a handfulGreen chilies- 1-2 tbspSalt and pepper- to taste

Directions:

  • In a food processor, combine black beans, tahini, lime juice, olive oil, garlic cloves, cumin and chili powder and process until smoothYou may add a tbsp. of water if the mixture needs more liquid to get smootherNow add chopper coriander and green chillies and season with salt and pepperServe with pita bread, wheat toast, crackers or naan

2) Pumpkin hummus

Ingredients:

  • Pumpkin puree- 2/3 cupChickpeas (boiled)- 1 cupGarlic clove- 1-2Olive oil- 2 tbspWater- 2 tbspHoney- 1 tbspSalt- to taste

Directions:

  • In a saucepan, heat olive oil and roast garlic cloves over medium heat.In a food processor, add all the ingredients and process until smooth.Add more oil or water to make the consistency more like pasteServe with pita bread, wheat toast, crackers or naan

3) Beetroot hummus


Ingredients:

  • Beetroot- 2Chickpeas (boiled)- 1 cupGarlic clove- 1tahini- 1 tbspLemon- 1Extra virgin olive oil- ¼ cupSalt- to taste

Directions:

  • Wash and trim 2 red beets and wrap them in a foil. Place them on a baking sheet and roast them in an oven at 375 degrees until they are super tenderOnce fully cooked, remove the beetroot from the oven and let it cool at room temperature. Peel and cube them.Now in a food processor add a cup of chickpeas, 1 clove garlic, tahini, roasted beet root, olive oil and salt and process until smoothAdd lemon juice to the paste and mix wellServe with pita bread, wheat toast, crackers or naan

4) Zucchini Hummus

Ingredients:

  • Zucchini- diced and peeled- 1 cupTahini- 1/3 cup Lemon juice- 2-3 tbspGarlic clove- 1 mincedSalt- ½ tspCumin (grounded) – 2 tsp

Directions:

  • In a food processor, add all the ingredients and blend until smooth and creamyAdd seasoning as per tasteServe with pita bread, wheat toast, crackers or naan
