Nothing beats a warm cup of soup on a cold winter night. Home cooked soups are super healthy and rich in nutrition and make for a great evening supper during winters which is why we have brought together some of the most delicious, extremely healthy soup recipes that you can enjoy during the cold winter days :

1) Ginger Garlic Chicken Noodle Soup

Ingredients:

· Chicken stock- 8 cups

· Boneless chicken breast- 800 g

· Ginger- cut lengthwise- 2 tbsp

· Garlic cloves- 6 sliced

· Mushrooms- halved- 1 cup

· Soy sauce- 1 tbsp

· Sesame oil- 2 tsp

· Dried noodles (no tastemaker reqd)- 3 packets

· Spring onions- green part sliced- 2 cups

· Salt- as per taste

· Pepper- as per taste

Directions:

· In a large pan, combine stock, ginger, garlic and bring it to boil

· Let it cook on low flame till the chicken is tender and cooked for approx. 30 minutes

· Now add mushrooms, soy sauce, sesame oil and let it cook on low flame. Cover the lid

· Now add dried noodles to the pot and keep stirring until the noodles get soft. Cook until all ingredients are soft and tenders

· Add salt and pepper as per taste and mix well

· Pour into serving bowl

· Add chopped spring onions for garnishing.

2) Pumpkin Soup

Ingredients:

· Pumpkin- 1.2 kg

· Onions- 1 sliced

· Garlic cloves- 2 sliced

· Vegetable or chicken broth- 3 cups

· Salt and pepper- as per taste

· Water- 1 cup

· Cream- 2 tbsp

Directions:

· Peel and cut the pumpkin into small chunks

· In a pan, add pumpkin, onion, garlic, broth, and water and bring it to boil on low to medium heat

· Cook the pumpkin until its soft and tender

· Now remove the pot from heat and using a blender, blend the pumpkin mixture until smooth

· Add salt and pepper as per taste

· Drizzle some cream over it

· Serve hot

3) Tomato Basil Soup

Ingredients:

· Tomatoes- 5

· Onions- medium sized- 1

· Garlic cloves- 7

· Carrots- 3 large

· Olive oil- 1/3 cup

· Salt and pepper as per taste

· Vegetable broth (or chicken broth)- 4 cups

· Vinegar- 2 tbsp

· Red pepper flakes- ½ tsp

· Basil leaves- 2-3

Directions:

· Preheat oven to 375 degrees F

· On a baking sheet, place tomatoes, onions, garlic, carrots

· Drizzle some olive oil and pinch of salt and pepper and let it bake in the oven for 1 hr

· Now transfer the ingredients from the baking tray into a blender and blend until smooth

· Strain to get rid of seeds and chunks

· Now transfer the puree into a pot and add broth and let it cook on low flame for 5-7 minutes

· Add basil leaves, vinegar, red chili flakes, salt, and pepper

· Serve hot

4) Onion Soup

Ingredients:

· Onions- shredded 3

· Garlic cloves- 2 crushed

· Butter- 15g

· Vegetable stock- 1 cup

· Water- 900 ml

· Sugar- 2 tsp

· Potatoes cubed- 2

· Carrot- 1 sliced

· Fresh coriander- a handful

· Salt and pepper- to taste

Directions:

· In a pan add butter on low heat and add shredded onions

· Saute onions till golden brown and add crushed garlic and mix well

· Now in a pan, add water, vegetable stock, herbs, sugar, salt, and pepper and add onion and garlic mix to it

· Cut potatoes in cubes and add sliced carrots into the pan and let it cook on low to medium heat for 1 hour

· Using a blender, blend the mixture to get a smooth soup-like consistency

· Serve hot
