1) Creamy chicken


Ingredients:

  • Chicken breasts- 1 kg
  • Extra virgin olive oil- 3 tbsp
  • Salt and pepper- for seasoning
  • Shallot- minced-1
  • Herb cheese- 500 gm
  • Chicken broth- ½ cup
  • Lemon juice- 1 tbsp
  • Fresh herbs- 2 tbsp

Directions:

  • Brush both sides of chicken breast with extra virgin olive oil and sprinkle some salt and pepper
  • Cook the chicken breast in a non-stick pan over medium heat until the pink color of the breasts disappear and set them aside on a plate
  • Now in the pan, add some extra virgin olive and saute the shallots for a minute
  • Add herb cheese, chicken broth and lemon juice and stir well and add fresh herbs
  • Drizzle this sauce over the chicken and serve

2) Chicken stir fry


Ingredients:

  • Coconut oil- 1 tsp
  • Chicken
  • Broccoli- chopped- 1 head
  • Carrots sliced- 1 cup
  • Chicken broth- 1 cup
  • Soya sauce- ½ tbsp.
  • Brown sugar- 1 tbsp
  • Minced garlic- ½ tsp

Directions:

  • In a frying pan, heat coconut oil and add chicken strip and cook them until they are brown
  • Now add broccoli and carrots and toss them with the chicken
  • In another bowl, whisk together chicken broth, soya sauce and brown sugar and pour this over chicken and veggies
  • Cover and cook for about 10-12 minutes until the veggies are soft
  • Serve with rice

3) Potato soup


Ingredients:

  • Peeled and cubed potatoes- 3 cups
  • Carrot- 1 grated
  • Onion- 1 chopped
  • Salt and pepper- for seasoning
  • Parsley flakes- 1 tbsp
  • Chicken broth- 1 can
  • All purpose flour- 3 tbsp
  • Milk- 3 cup
  • Cheese- 1 cup grated
  • Green onions- 2 sliced

Directions:

  • In a pan, add vegetable, seasoning and broth and bring it to boil.
  • Reduce the heat and let it simmer for a few minutes until potatoes are soft
  • Mix flour, milk until smooth and bring this to boil by stirring continuously
  • Stir until 2 minutes until the mixture thickens
  • Add cheese and turn off the flame until the cheese melts
  • Add green onions and serve

4) Chicken pasta


Ingredients:

  • Penne pasta uncooked- 4 cups
  • Chicken breast- 1.5 kg
  • Bell pepper – thinly sliced
  • Chopped onion- ½ cup
  • Garlic minced-1
  • Olive oil- 1 tbsp
  • Fresh mushrooms- 1 cup
  • Cherry tomatoes- cut into halves- 1 cup
  • Pizza sauce- 1 can
  • Italian seasoning- ½ tsp
  • Mozzarella cheese- 1/3 cup

Directions:

  • Check the package instructions and cook pasta
  • In a non stick wok, stir fry chicken, bell pepper, onion and garlic in oil until chicken is no longer pink
  • Now add cooked pasta, mushrooms, tomatoes, sauce and seasoning and let it cook on low flame for 2-3 minutes
  • Sprinkle cheese and serve
