Eggs are a great source of protein and what better way to kick off your mornings on such a highly nutritious note. Eggs make for a great breakfast option not just because they are super healthy but also because they are easy to make. And if you are bored of eating omelette then these egg recipes will surely redefine your morning breakfast:

1) Baked egg with spinach and tomatoes

Ingredients:

· Olive oil - 2 tbsp

· Onion - 1 medium

· Baby spinach - 1 cup

· Tomatoes cut in cubes - 1

· Grounded cumin - 1 tsp

· Salt - 1 tsp

· Freshly grounded pepper - 1 tsp

· Red chili peppers – ½ tsp

· Large eggs - 4

· Feta cheese - ¼ cup

Directions

· Preheat oven to 400 deg F.

· In A saucepan, heat oil on low to medium heat. Add onion and saute until soft and golden. Now add baby spinach and saute for 2-3 minutes

· Remove the saucepan from heat

· In a bowl, stir together tomatoes, cumin, salt, pepper, red chili powder. Add the onion-spinach mixture and toss the ingredients till they are well combined

· In a muffin tray, spray some oil and put the tomato spinach mixture in each.

· Crack an egg in the middle of each muffin tray and sprinkle some feta cheese on top

· Bake for 12-15 minutes until the egg whites are set and the egg yolks are still soft.

2) Egg fried rice

Ingredients:

· Egg - 1

· Spring onions- chopped - 2 tsp

· Oil - 2 tbsp

· Ginger - 1 tsp chopped

· Garlic cloves - 6

· Red chili - 1 chopped

· Rice - 2 cups

· Salt - to taste

· Black pepper powder - 1 tsp

· Soya sauce – 1 tsp

· Fresh coriander- 1 tsp

Directions:

· In a wok, heat oil on medium flame and add chopped garlic

· Saute until garlic is golden brown and add spring onions, ginger, and red chili and saute for another minute

· Now crack an egg into the pan and mix well until cook and scrambled

· Now add steamed rice into the pan and toss until all the ingredients combine

· Add salt, black pepper, soy sauce over the rice

· Serve hot

3) Egg Lettuce Tomato Sandwich

Ingredients:

· Sandwich bread - 2 slices

· Mayonnaise - ¼ cup

· Tomatoes cut into slices - 2

· Salt - to taste

· Grounded pepper - 1 tsp

· Hard boiled eggs - 2

· Iceberg lettuce - 3 leaves

Directions:

· Toast bread on a skillet or a toaster

· Apply a thin layer of mayonnaise on the bread slice

· Top the slice with sliced tomatoes, and sprinkle salt and pepper as per taste

· Arrange eggs over tomatoes and season with pepper

· Top it up with lettuce and serve

4) Spinach with Chickpeas and fried eggs

Ingredients:

· Chickpeas boiled – 2 cups

· Eggs - 4

· Vegetable broth – 3 cups

· Olive oil - 3 tbsp

· Garlic cloves - 4

· Spinach coarsely chopped - 8 cups

· Onion chopped - 1 cup

· Cumin seeds – 1 tsp

· Red chili powder - ¼ tsp

· Tomatoes cut into cubes - 2 cup

Directions:

· In a wok, heat oil and add garlic cloves and saute till golden brown

· Add spinach to the wok and toss some salt and pepper int it and cook spinach until it is soft and wilted

· Transfer in a bowl and set aside

· In the wok, add 2 tbsp oil and put it on low to medium flame. Now add onions and garlic cloves and cook until onions are soft and golden brown.

· Now add cumin, red chili powder, chickpeas, tomatoes and toss to coat well and cook until chickpeas begin to brown and tomatoes begin to caramelize for some

8 - 10 minutes

· Now add vegetable broth and let it cook on a low heat and mash some chickpeas with a potato masher until sauce is thickened for 15-20 minutes.

· Fold in spinach and add more broth and cook until it thickens

· In a skillet, add oil and crack 2 eggs and cook until the white portion is set and the yellow part is still soft and season with salt and pepper

· In a serving bowl, add chickpea mix, top it with fried eggs and serve
