This particular one is a quick and easy to make recipe that can be made with minimal hassles and with very few ingredients, and is very tasty as well. It can be served as a snack, starter or as a side dish, and is a perfect way to enjoy vegetables in simple, healthy home cooked way.

So, let’s get started with the recipe of baby potato and green peas stir fry:Ingredients:

  • Baby potatoes – 500 grams (boiled and peeled)Fresh green peas – 1 cup (boiled)Ginger – 1 inch, finely choppedCumin seeds – 2 tablespoons (roasted and ground)Green chilies – 2-4 (as per taste) finely choppedSalt to taste2 tablespoons of cooking oil

Process:

  • Choose only the small baby potatoes and boil them. Keep aside to cool a bit; don’t pour cold water on them. Peel the potatoes while they are still pretty hot, but cool enough to handle.Add the salt to the potatoes and mix well. Keep aside, covered with a lidBoil the green peas as well. Drain and keep aside.Heat up a pan and roast the cumin seeds on low-medium heat, till they start to release aroma. Put these in a grinder jar and make a powder.In a wok, heat up the cooking oil. Add the chopped ginger and green chilies and cook for 1 minute on low heat.Now, add the baby potatoes and fry them till they develop a golden-brown colour.Add the boiled green peas and cook for some time more, till the dish looks done.Sprinkle the roasted cumin powder and mix well quickly on high heat.
