1. Kale Sweet Potato


Ingredients:

  • Eggs – 6
  • Half and half – 1 cup
  • Ground pepper – ½ teaspoon
  • Sweet potatoes – 2 cup
  • Olive oil – 2 tablespoon
  • Kale – 2 cup
  • Red onion – ½
  • Clove Garlic – 2
  • Goat cheese – 90 gm

Directions :

  • Preheat the oven to 350 degrees F.
  • Whisk together eggs, half-and-half and ground pepper
  • Sauté sweet potatoes in 1 tablespoon oil in a ovenproof nonstick skillet over medium heat for about 8-10 minutes until potatoes are tender and golden
  • Sauté kale, red onions and clove garlic in hot oil for about 3-4 minutes
  • And stir in potatoes, pour egg mixture evenly over vegetables and coo for 3 more minutes
  • Sprinkle egg mixture with goat cheese
  • Bake at 350 degrees F for about 10-14 minutes, and its ready to serve

2. Sweet potato wedges


Ingredients :

  • Sweet potatoes – 6
  • Cooking spray
  • Sugar – 2 teaspoons
  • Salt – ½ teaspoon
  • Ground Red Pepper – ¼ teaspoon
  • Black Pepper – 1/8 teaspoon

Directions :

  • Preheat oven to 500 degrees F
  • Peel potatoes; cut them lengthwise into quarters
  • Place them in a large bowl, coat with cooking spray
  • Combine sugar, salt and peppers
  • Sprinkle over potatoes, tossing well to coat
  • Arrange potatoes, cut sides down in a single layer on a baking sheet
  • Bake at 500 for 10 minutes, turn the wedges over and bake an additional 10 minutes until brown.

3. Sweet potato pie

 

Ingredients :

  • Sweet potatoes – 4
  • Unsalted butter – 1 stick
  • Heavy cream – ½ cup
  • Agave nectar – 2 tablespoon
  • Cinnamon – ½ teaspoon
  • Nutmeg – ½ teaspoon
  • Almond extract – 1 teaspoon
  • Vanilla extract – 1 teaspoon
  • Kosher Salt – pinch (just for taste)
  • Lemon – zest
  • Ready-made deep-dish pie crust – 1
  • Egg yolk – 1

Directions :

  • Boil the sweet potatoes in a pot of boiling water until its tender like about 25 minutes
  • Allow it to cool down and then peel off
  • Put the sweet potatoes in a large mixing bowl along with butter, cream, agave, cinnamon, nutmeg, almond extract, vanilla extract, salt and lemon zest.
  • Mash and mix them well and set aside
  • Lightly dust the pie crust with some cinnamon and nutmeg
  • Bake until its brown like for about 10 minutes
  • Remove the pan from the oven and add all the sweet potato filling, roll out one of the pie dough pieces and slice into strips. Line the top of the pie with parallel strips of pie dough
  • Rotate the pan 90 degrees and arrange a second row of pie dough at a right angle to the first o create a checked look on top
  • Brush the top with the egg yolk and bake until the pie is firm for about 40 minutes

4.  Sweet potato fries with herby dip


Ingredients :

  • Sweet potatoes (fried) – 1 kg
  • Olive oil – 1 tbsp
  • Smoked salt – 1 tbsp
  • Polenta – 1 tbsp (for dip)
  • Greek yogurt – 180 g
  • Jalapeno – 1
  • Garlic clove – 1
  • Mint (small pack) – 1
  • Coriander (small pack) – 1
  • Lime – 1
  • Ground Cumin – 1 tsp

Directions :

  • Heat oven to 200 c
  • Toss the sweet potatoes with olive oil, smoked salt and polenta in a large bowl massaging them well to coat
  • Spread out onto two large baking trays and roast them for 45 minutes until it’s tender and crisp
  • Meanwhile, blitz all the ingredients for the dip together with some seasoning to a smooth green sauce
  • Serve alongside the sweet potato fries

5.  Cheesy Garlic Sweet Potatoes


Ingredients :

  • Sweet potatoes – 4
  • Garlic butter melted – ¼ cup
  • Sea Salt – to taste
  • Black Pepper – to taste
  • Mozzarella Cheese – ¾ cup
  • Parmesan cheese – ½ cup
  • Parsley – 1tbsp

Directions :

  • Heat oven to 220c , brush the potatoes with the garlic butter and season each potato with sea salt and black pepper
  • Arrange cut-side down on a lightly greased baking sheet until it’s golden brown for about 30-32 minutes
  • Now flip them and top with mozzarella, parmesan and parsley
  • Now heat them over medium heat until the cheese is golden and melted
  • Sprinkle with more salt and pepper for per your taste and serve warm

6. Maple syrup sweet potato


Ingredients :

  • Sweet potato – 1 kg (peeled and cut into1 ½ inch pieces)
  • Maple syrup – 1/3 cup
  • Butter – 2 tbsp
  • Lemon juice – 1 tbsp
  • Salt – ½ tsp
  • Freshly ground pepper – to taste

Directions :

  • Preheat oven to 400F
  • Put the sweet potatoes in a baking dish, combine maple syrup, butter, lemon juice, salt and pepper in a bowl
  • Pour the mixture over the sweet potatoes
  • Cover and bake the sweet potatoes for 15 minutes
  • Uncover, stir and cook for every 15 minutes until it’s brown 40 – 50 minutes more

7. Sweet potatoes burritos


Ingredients :

  • Vegetable oil – 1 tbsp
  • Onion – 1
  • Garlic clove – 4
  • Canned Kidney Beans – 6 cups
  • Water – 2 cups
  • Chilli powder – 3 tbsp
  • Mustard – 4 tbsp
  • Ground Cumin – 2 tbsp
  • Soy sauce – 3 tbsp
  • Sweet potatoes – (mashed cooked) 4 cups
  • Flour Tortillas – 12 inch
  • Cheese – 230 gm

Directions :

  • Preheat oven to 350 degrees
  • Heat oil in medium skillet and saute onion and garlic until brown, mash beans into onion mixture and stir in water for 2-3 minutes
  • Remove from heat and stir in the soy sauce, chilli powder, mustard and cumin
  • Divide bean mixture and mashed sweet potatoes evenly between the tortills and top it with cheese
  • Fold around the fillings and place on a baking sheet
  • Bake them for around 12 minutes, it’s ready to serve
