  1. Garlic Lemon Chicken

Ingredients:

· Salt – ¾ teaspoon

· Black Pepper – ¼ teaspoon

· Cayenne Pepper – ¼ teaspoon

· Paprika – 1/8 teaspoon

· Lime Juice – 3 teaspoon

· Garlic Powder – 2 teaspoon

· Onion Powder – 1/8 teaspoon

· Dried Thyme – ¼ teaspoon

· Dried Parsley – ¼ teaspoon

· Butter – 2 tablespoons

· Olive Oil – 1 tablespoons

· 4 Boneless, Skinless Chicken Breast Halves

Directions:

· In a small bowl, mix together Salt, Black Pepper, Cayenne, Paprika, ¼ teaspoon garlic powder, Thyme, onion powder and parsley.

· Sprinkle spice mixture freely on both sides of the chicken breast.

· Heat butter and olive oil in a saucepan with medium heat, saute chicken until it becomes golden brown for about 5-6 minutes on each side.

· Then sprinkle with two teaspoons of garlic powder and 3 teaspoons of lime juice and cook for 5 minutes more then stir frequently for about 2 minutes.

2. Dry Chicken

Ingredients:

( For Coconut Paste )

· Pepper – ½ teaspoon

· Cloves – 4

· Cinnamon – 4 pieces

· Chillies – 10

· Kashmiri chilies – 6

· Turmeric – ¼ teaspoon

· Onion – 1

· Flakes Garlic – 4-5 flakes

· Ginger – 1

· Salt – 1 tablespoon

· Cardamom – 2

· Oil – 2 tablespoon

· Coriander – 2 tablespoon

· Cumin – ¼ teaspoon

· Mustard – ¼ teaspoon

· Chicken – 1 kg

  Directions:

· Roast both Chilies in a pan & keep aside.

· Then roast coriander, cumin, mustard, pepper, cloves, cinnamon, onion, ginger, salt, tamarind, turmeric & garlic and stir all the items together.

· Add a little water and make a coconut paste. Fry onions until it becomes brown.

· Then add chicken, salt, cardamom and cook for 10 minutes.

· Add ground spices according to your taste and again boil it for about 10 minutes.

· Add scrapped coconut and boil again.

· Then serve it with some amount of ghee.

3. Chicken Burrito

Ingredients:

· Chopped yellow onion – ½ cup

· Taco seasoning mix – 2 teaspoon

· Black Beans, drained, rinsed – 425 grams

· Diced Tomatoes & Green Chilies, undrained – 283grams

· Water – 1 cup

· Instant brown rice, uncooked 1-1/4 cups

· Cheese blend – 1 cup

· Boneless skinless chicken breasts, cut into bite-size pieces – 453 grams

· Oil – 2 tabelspoon

Directions:

· Heat oil in a pan in a medium heat.

· Add chicken and cook for 3 minutes.

· Add onions and taco seasonings cook for 2 minutes more.

· Stir in black beans, tomatoes and water; bring to a boil.

· Then sprinkle top with cheese, and it is ready to serve

4. Creamy Chicken

Ingredients:

· Green chillies- chopped 3

· Onion- 1 chopped

· Milk- 2.5 cups

· Cream- 1 cup

· Cardamom powder- 1 tsp

· Ginger- 1tsp chopped

· Coriander leaves- 2tbsp chopped

· Dry ginger powder- ½ tsp

· White pepper powder- 1 tsp

· Fenugreek leaves- 1 tsp

· Ground spices- 2 tsp

· Saffron- a pinch

· Almonds- chopped 2

· Salt- to taste

For Marinade:

· Chicken drumsticks- 5

· Ginger paste – 1 tsp

· White pepper powder – 2 tsp

For groundspices:

· Black cardamom- 2

· Green cardamom – 4

· Cumin- 2tsp

· Clove- 3

· Peppercorns black- 4

Directions:

. Make small cuts in chicken drumsticks and marinate it with ginger, garlick paster, white pepper for 30 mins

. Dry roast the ground spices ingredients and grind them in a grinder

. In a pan, add cream, onions, green chillies and heat on medium flame till onions turn to golden brown. And add some milk and chicken

. Add green cardamom powder, chopped ginger, dry ginger powder, coriander leaves, white pepper powder, fenugreek leaves, ground spices and a pinch of saffron

. Let it simmer and cook for about 7-8 minutes and serve with almonds.
