Even though sides are not a necessary part of any meal but doesn’t it feel incomplete without one when you’re dining outside? It does, right? And what if we tell you that you don’t really have to go outside to enjoy delicious sides with your meals anymore because you can easily prepare them at home too? Don’t believe us? Try yourself with these 6 healthy and delicious summer sides!

  1. Parmesan potato wedges

Ingredients:

· Potatoes – 3 large

· Extra-virgin olive oil – 1/4 c.

· Garlic powder – 1 tbsp.

· Italian seasoning – 1 tbsp.

· Kosher salt – to taste

· Freshly ground black pepper – to taste

· Freshly grated Parmesan – 1/2 c.

· Chopped fresh parsley, for garnish

· Caesar dressing, for dipping

Instructions:

· First preheat oven to 400°.

· Then cut potatoes into wedges.

· Take a baking sheet and put potato wedges on it.

· Top with olive oil, garlic powder and Italian seasoning and season with salt and pepper.

· Toss until fully coated, then flip skin side down and top with Parmesan.

· Bake for 25 to 30 minutes, until deeply golden and crispy.

· Garnish with parsley and serve with Caesar dressing for dipping.

2. Baked cream corn

Ingredients:

· Chicken (chopped) – 6 slices

· Cooking spray

· Corn kernels – 3 c.

· All-purpose flour – 1/4 c.

· Shredded Cheddar – 2 c.

· Jalapeño (minced) – 1

· Sugar – 1 tbsp.

· Eggs (lightly beaten) – 2 large

· Melted butter – 1/4 c.

· Milk – 1 c.

· Kosher salt

· Freshly ground black pepper

Instructions:

· Preheat oven to 375 degrees F.

· Take a medium skillet, add chicken slices and cook over medium heat until crispy

· Take a plate and line it with paper towel.

· Transfer the slices to it and then drain them.

· Take a baking dish with spray with cooking spray.

· Add corn, flour, 1 1/2 cups cheddar, jalapeño, sugar, cooked chicken, beaten eggs, melted butter, and milk.

· Season generously with salt and pepper and mix together until combined.

· Top with remaining 1/2 cup cheddar.

· Bake 1 hour, then let cool 20 minutes to firm up.

· Serve!

3. Watermelon-Strawberry salad

Ingredients:

· Watermelon (cubed) – 3 c.

· Strawberries (chopped) – 2 c.

· Feta (crumbled) – 1/2 c.

· Extra-virgin olive oil – 1/4 c.

· Kosher salt

· Freshly ground black pepper

· Fresh basil (torn) – 1/4 c.

Instructions:

· Take a large bowl, add watermelon, strawberries, feta and olive oil, mix well to combine.

· Season with salt and pepper. Toss to coat.

· Garnish with basil and serve.

4. Grilled Pineapple Salad

Ingredients:

· Fresh pineapple (chopped into 1″ pieces) – 1

· Extra-virgin olive oil, for brushing

· Peaches (chopped) – 2

· Jalapeño (minced) – 1

· Red onion (chopped) – ½

· Lime juice – 1 tbsp.

· Kosher salt

· Freshly chopped cilantro – 2 tbsp.

Instructions:

· Take a pan and grill over medium-high heat.

· Brush pineapple with olive oil and grill until properly cooked on both sides.

· Set aside to cool, then chop into bite-sized pieces.

· Take a medium bowl, add pineapple, peaches, jalapeños, onions and lime juice, and mix them well.

· Season with salt and garnish with cilantro before serving!

5. Chicken Caesar Pasta salad

Ingredients:

For the pasta salad:

· Extra-virgin olive oil – 1 tbsp.

· Boneless skinless chicken breasts – 2

· Italian seasoning – 1 tsp.

· Garlic powder – 1 tsp.

· Kosher salt

· Penne pasta (cooked) – 453 g

· Chopped lettuce – 2 c.

· Halved grape tomatoes – 1 c.

· Freshly grated Parmesan – 1/2 c.

· Croutons – 1/2 c.

For the Dressing:

· Caesar dressing – 2/3 c.

· Juice of 1/2 a lemon

· Chopped parsley – 1 tbsp.

· Kosher salt

· Freshly ground black pepper

Instructions:

· Take a large skillet and add oil over medium heat.

· Add chicken breasts and season with Italian seasoning, garlic powder and salt.

· Cook for 6-8 minutes until golden on both sides and cooked through.

· Set aside to rest, then slice into bite-sized pieces.

· Tale another large bowl, add chicken with cooked pasta, romaine, tomatoes, parmesan and croutons, mix well to combine.

· In a medium bowl, add Caesar dressing with lemon juice and parsley, and combine.

· Season with salt and pepper.

· Pour over the pasta salad mixture and stir to combine.

· Serve

6. Grilled Pineapple Salsa

Ingredients:

· Fresh pineapple, peeled, and chopped into 1″ pieces – 1

· Extra-virgin olive oil, for brushing

· Peaches (chopped) – 2

· Jalapeño (minced) – 1

· Red onion (chopped) – ½

· Juice of 1 lime

· Kosher salt

· Freshly chopped cilantro – 2 tbsp.

Instructions:

· Grill pan over medium-high heat.
